Tasting Notes
Nose
Herbal and fruity (figs and prunes), candied ginger, nutty, strong honey with pine needles, toasted almonds, and flax. The mild herbal notes (rosemary, eucalyptus and menthol) hang around. There is a hint of woodsmoke, but it is hidden behind the herbs and honey.
Palate
Rich and unctuous, a rich jammy flavour with some woodsmoke, rosemary and eucalyptus, scorched almonds, cured game meats: sweet and savoury like kangaroo/venison in a port and mixed berry jam marinade with allspice, figs and raisins.
Finish
Herbal honey and slightly medicinal (Allens Throaties), stewed fruits, tiny hint of paperbark, good length.

Comment
Compared to our earlier releases the drying wood notes have been tempered down. If flavours could paint a picture for me this dram conjures up one of a “Campfire on a riverbank (redgum, mallee root, eucalyptus leaves) with venison or kangaroo in a port and berry jam marinade cooking in the camp oven.”
