Iniquity Den's Dram – Apparition
Nose
Grassy. Straw. Hay bales, candied citrus, caramalised sugar. Late pick Riesling and ginger snaps
Palate
Oily mouthfeel, gentle heat, baking spice, apple pie with cinnamon and sugar crust
Finish
Medium length and sweet that gently fades before returning with more stewed fruit and baking spice

Finished for 18 months in an ex-rum and ex-sherry cask after aging for 4 ½ years in an ex-Heaven Hill bourbon cask.
Comment
This bottling is called Apparition because our blender, Vic was struggling to balance the components of the bottling to our usual standard. In the early hours of one morning Vic had a vision of a cask, hiding in plain sight in the racks that had seen the inside of more than a few barrels. Such a vision is sometimes called an "apparition" and that cask became our Den’s Dram 'Apparition'.
It is delightfully easy to drink.
